CLAUDIA’S FRUJI ELDERFLOWER CAKE

INGREDIENTS
– 3 eggs
– 20 g honey
– 200 g self-raising flour
– 2 tbsp rice oil or melted coconut oil
– 80 ml FRUJI elderflower drink @fruji_juices
– 150 g authentic Greek yogurt
For the glaze:
– A few tablespoons of icing sugar
– FRUJI elderflower drink (to taste)
– Optional: fresh elderflowers for decoration
PREPARE

Beat the eggs for 4 minutes until light and fluffy.
Add the Greek yogurt and mix well.
Stir in the elderflower drink, honey, and oil.
Gently fold in the flour with a spatula.
Pour the batter into a greased cake tin.
Bake the cake for 45 minutes at 170°C (preheated oven).
For the glaze:
Mix icing sugar with a little FRUJI elderflower drink until you get a smooth glaze.
Let the cake cool, then drizzle the glaze over it.
Optionally, decorate with fresh elderflowers.
